Early in the morning, the good smell that emanates from the kitchen of the Sáu Hoài vermicelli establishment announces a busy day for production and welcoming visitors. Mr. Sáu Hoài shares his experiences with us: “To make fresh and delicious vermicelli, you first have to choose the right rice, then beat the dough for a set period of time and many other meticulous operations. Arbitrary estimation is not recommended ...”. Each manufacturing step requires the dedication and precise movements of seasoned craftsmen for quality products and typical tastes. This is perhaps why the establishment of manual production of rice vermicelli Sáu Hoài remains unique in its own way “despite the recommendations of machine production to expand its scope and bring more gains, for the reputation of the establishment,” he shares. Mr. Sáu Hoài thinks otherwise: “This is the work inherited from generation to generation. Our profession is in danger of disappearing and we are doing everything to keep it despite the modest profits. What you gain is to pass it on to later generations and make it known to more visitors. ”
The combination of making rice vermicelli with tourism comes by chance. Mr. Sáu Hoài said: “It’s an unforeseen fate. Thanks to the visit of a few people at the beginning and then many tourists, I thought of doing some sightseeing by rebuilding the premises. I want to introduce this traditional craft to the inhabitants of the whole country and also to international visitors”.
The traditional Tết is approaching, the number of visitors increases, and the consumption of rice vermicelli too. The rice vermicelli factory of Mr. Sáu Hoài is eager to offer its new products. Alongside traditional opalescent rice vermicelli, the establishment invents new products in bright colors and with original tastes by mixing rice paste with vegetables and fruits such as beets, potatoes, dragon fruit ... Each product sells for 40,000 VND to 50,000 VND per kilo. Visitors can not only taste the rice vermicelli pizzas with a typical southern taste invented by Mr. Sáu Hoài, visit the vermicelli making process, learn how to make them but also buy artisanal products as souvenir gifts (fish traps, household items…) in bamboo.
